British Style Scones
3 1/2 cup flour
2 Tbs. baking powder
1/2 tsp. baking soda
3/4 cup sugar
1 cup currants
1/2 cup buttermilk
2 eggs
Sift flour, baking powder and soda into a bowl. Stir in the sugar. Cut
butter into mixture to resemble fine meal consistency.Stir in the
currants.Combine eggs and buutermilk and stir with a fork into mealmixture
to form a soft dough. shape dough into a ball. Roll or pat out lightlyonto
a floured surface, 1 inch thick.Brush dough with cream. Sprinkle with sugar.
score into 8 wedges. Bake @ 400 F 30 to 40 minutes or until puffed and golden.
